Tips to make the PERFECT Snickerdoodle cookies:

Three kitchen items make these cookies come together quickly and easily. I actually use these items in nearly every cookie recipe I make, so they’re quite versatile.

  • First, I line my cookie sheets with a piece ofparchment paper. They’re sold in sizes that fit a 12Ă—16 cookie sheet perfectly and enable to cookies to bake well without sticking- and no mess from spraying oil on the cookie sheets! Parchment is especially useful for this recipe as the dough is quite soft. It makes clean up a breeze!
  • The second item is aKitchenAid mixer. I love mine! I have a Bosch as well but I find I use my KitchenAid for cookies. There is a cookie paddle that comes with every mixer that you attach to the top of the mixer. They’re easy to use and help you mix the ingredients uniformly. I also use the metal whisk attachment in this recipe to make the frosting. It whips it up super fast! Add this to your wish list because it’s one of my all-time used small appliances ever!
  • The third item is acookie scoop! Years and years ago I used to use 2 spoons to measure and scrape cookie dough onto the pans. It wasn’t a perfect process and I often ended up with oblong cookies in various sizes. A friend of mine brought cookies to a party and I noticed each and every one of her cookies looked PERFECT. Her secret? A cookie scoop! They come in three sizes- 1/2 tablespoon, 1.5 tablespoon and 3 tablespoon scoops. I used the middle size- 1.5 tablespoon for these, and most other cookies. (Although when I’m serving a large crowd, I use the small cookie scoop. People love having a smaller cookie, especially at an event with several other desserts.)

Do you have to have Cream of Tartar for Snickerdoodles?

Cream of Tartar is one of the ingredients that gives Snickerdoodles its distinct flavor & texture. It makes it so that these cookies don’t just taste like sugar cookies with a cinnamon sugar coating. The flavor is unique and fairly difficult to replicate. Nevertheless, if you’re out and don’t want to run to the store, you can substitute baking powder instead, being as baking powder actually contains Cream of Tartar!

There’s something magical about visiting the ocean with your kids. I’m going to be honest, it’s nowhere near as serene as visiting the ocean without kids, but still, there’s something incredible about it. Here my husband is helping my youngest daughter spot the colorful fish swimming right around the rocks on the shoreline. Don’t miss the sleeping sea lion in the foreground! This was a very small, very popular beach with lots of fun things to see.

FAQs

Why didn't my snickerdoodles crack? ›

Cracking occurs from several chemical reactions during the baking process. If some of your cookies aren't cracking, it could be because those dough balls were less round than others, the dough became too warm, your oven isn't heating evenly, or (most likely) the cinnamon sugar coating wasn't applied as thoroughly.

What is the secret to soft cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

Why didn't my snickerdoodles flatten out? ›

Yes, but if you add too much flour, your cookies won't spread as they bake. Too much flour causes the dough to become dry and crumbly, which prevents it from flattening out during baking. As a result, your cookies will stay in their original shape instead of spreading out into nice circles.

What happens if you add too much cream of tartar? ›

Keep in mind that more cream of tartar doesn't necessarily mean a better, more stable result. “Too much cream of tartar will impart a metallic, tin-like taste,” Molly warns.

Why are my snickerdoodles always flat? ›

The Problem: Your Oven Is Too Hot

Why does snickerdoodle dough need to be refrigerated? ›

Don't skip chilling the cookie dough.

Refrigerating snickerdoodle dough lets the butter resolidify and prevents the cookies from flattening out in the oven. I recommend giving the dough at least 45-60 minutes of chilling time in the fridge before baking.

Is it OK to use melted butter instead of softened? ›

Softened butter and melted butter are not the same. Using melted butter will change the texture of whatever you're baking. If you only want the butter to soften for spreading, microwave it on the Defrost setting (30%) in 5-second increments until it's softened as desired.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

Why are my snickerdoodles so hard? ›

Snickerdoodles might turn out hard if they are overbaked or if the dough is too dry.

Why are my snickerdoodles spreading so much? ›

Temperature. Dough that is too warm or soft will spread more than dough that is cooler, so if you're working in a very warm kitchen, putting your dough in the fridge for 15 minutes or longer before using it will help prevent spread. Butter that is too warm or soft is also a major culprit.

Why are my snickerdoodles so fluffy? ›

Why are my snickerdoodles puffy? Too much flour - spoon and level the flour correctly how I show it in my chocolate chip cookie post. Inaccurate oven temperature (too hot) - I advise using an oven thermometer for accurate baking results.

What happens if you don't use cream of tartar? ›

Without cream of tartar, you'll get the same baked good in the end, but the consistency may not be as flawless. If you're worried about your cake coming out too flat or your lemon meringue pie going runny, adding cream of tartar is an effective way to prevent it.

What is the benefit of cream of tartar in baking? ›

Culinary uses

Bakers often use cream of tartar in baked goods by mixing it with egg whites to help create stiff peaks in meringue. This prevents the formation of sugar crystals. Cream of tartar can be a substitute for anything from buttermilk to baking powder and lemon juice in your favorite recipes.

What is the purpose of cream of tartar in this recipe? ›

The most common recipes that call for cream of tartar are those that call for egg whites to be whipped, like angel food cake, genoise cake, meringue, and macarons. Jampel says that is because cream of tartar works as an egg white stabilizer that increases both the volume and shelf life of the meringue.
