This easy dinner roll recipe uses only seven ingredients, and it’s a tried and excellent recipe that will yield soft and fluffy dinner rolls. This recipe will make a great addition to your list.

EASY DINNER ROLLS RECIPE

As I mentioned on my blogs before, being on a budget has given me the drive and motivation to bake my dinner rolls. Speaking of budget, check out my flatbread and the homemade hummus that goes well with it. And while we’re on the topic of baking, why not make a Birthday cake as well.

Another benefit of baking your dinner rolls is it’s guaranteed to be the best. Sure, it takes a lot of work making your dinner rolls, but the sense of satisfaction you get when the results are way better than store-bought ones is well worth it. These rolls have a little touch of milky sweetness, making them perfect for soups and sandwiches.

I experimented with a recipe from an online source before this and failed twice. That got me thinking, what if I used my No-fail Ensaymada Recipe? ThenBOOM! Success at first try.

The secret of making these dinner rolls so fluffy is the water roux.

EASY DINNER ROLLS RECIPE (1)

What is water Roux

  • Water Roux is just another term for the Tangzhong technique where a part of the dough is pre-cook to caramelize and become starchy to make a soft and fluffy bread.

TIPS TO MAKE SOFT BREAD ROLLS:

  • Don’t overmix the dough. After adding all ingredients, turn the stand mixer on medium and mix. Scrape the side of the bowl to mix all of the ingredients. Then you will see the dough turn smooth and pliable. You can tell when the dough is not sticking on the side.
  • Use non-expired yeast. Yeast is a leavening agent containing active enzymes which create CO2 when moist. The yeast will change its color and clump when stored wrong and long enough. The active yeast is bad and is ready to be tossed when that happens.
  • The most shelf life of yeast is two years after it’s opened. Please read the labels at the back of the bottle and see its expiry date.

  • Place milk and egg in a small container to make an egg wash—brush dough and bake.

WATER ROUX:

  • 1/4 cup All-Purpose Flour
  • 1/2 cup water

CAN I USE INSTANT YEAST INSTEAD OF ACTIVE DRY YEAST?

  • There is a difference between instant yeast and active dry yeast. For instant yeast, you can add it in the dry ingredients, while in active dry yeast, you have to mix it with warm water to make it bloom, like making it wake up from its deep sleep.

EASY DINNER ROLLS RECIPE (9)

HOW WARM IS THE MILK?

  • Microwave the milk for 25 seconds and see if it’s warm to the touch. If it is, it’s good enough, and add the active yeast. Mix to incorporate and let the mixture sit for 5 minutes. By then, the yeast will form bubbles-usually it takes 5- 20 minutes for the yeast to bloom.

YEAST FRESHNESS TEST

  • Dissolve one teaspoon of sugar in 1/2 cup of warm water and add the active dry yeast. You should see the yeast bloom in 5- 10 minutes.

HOW TO STORE YEAST

  • Yeast contains enzymes that become active with time. Once exposed to moisture, air, and heat; therefore, you must store it appropriately. An unopened bottle can be stored in the cupboard but kept in the fridge once the bottle is opened.
  • You can freeze the yeast six months after opening for the long term.
  • Dry yeast should sit at room temperature 40 minutes before use.

    Thank you.

  2. Caryl Leach says

Very nice soft buns. The instructions don’t tell you to add sugar when proofing the yeast, but it still works. Also, 2 1/4 cups flour is not enough flour. Ended up adding about another cup of flour to the recipe.

FAQs

What do you put on rolls before baking? ›

Brush the rolls gently with the beaten egg. Bake the rolls for 20 minutes, or until golden brown. Brush with melted butter and sprinkle with salt. Serve warm.

Why did my dinner rolls turn out dense? ›

Rolls that are not light and fluffy can be the result of using too much flour (not measuring the flour correctly, as we mention above), or not using the type of flour your recipe calls for. Another reason for dense tough rolls is overmixing, which will produce too much gluten.

How can I make my bread fluffier instead of dense? ›

Potato Flakes or Potato Water

Starch helps the dough by trapping the gas from the yeast in the dough and makes the bubbles stronger. This helps the bread to rise and be lighter and fluffier. If you are boiling potatoes, you can use the unsalted water in place of the water in your bread recipe to help out the yeast.

What ingredient makes bread light and fluffy? ›

Sugar: When yeast is mixed with sugar it consumes the sugar and produces carbon dioxide gas, which causes the bread dough to rise and become light and airy. Instant Yeast: Instant dry yeast can be added directly to the flour mixture without needing to be activated first.

Should you use parchment paper when baking rolls? ›

Baking rolls on a baking sheet: These rolls can also be baked on a rimmed baking sheet if you'd prefer not to have the tear-away edges. Line the baking sheet with parchment paper or a silicone baking liner and space the rolls a few inches apart.

Is it better to butter rolls before or after baking? ›

Butter basting: Rolls can be brushed with butter before, during, or after baking. While it doesn't brown the surface as much as egg wash will, it does promote browning and adds a lot of flavor.

Is active dry yeast the same as instant yeast? ›

A Quick Primer

Dry yeast comes in two forms: active and instant. "Active" describes any dry yeast that needs to be activated prior to use, while "instant dry yeast" describes any dry yeast that's ready for use the instant you open the package.

Why do my dinner rolls taste bland? ›

Salt adds flavor to bread. If none or too little is used in a recipe, the bread will lack the right flavor and taste "bland." If you reduce the amount of salt, try adding some dried herbs to increase the flavor.

Should rolls touch when baking? ›

Arrange the Dough For Baking

Arrange the rolls closer to each other, with enough room for them to expand into each other as they rise and bake. More traditional dinner rolls might be arranged on a baking sheet with lots of space in between so you get little orbs of golden brown goodness that don't touch.

Why do my dinner rolls taste yeasty? ›

If your bread has a sour, yeasty flavour and smells of alcohol then you have either used too much yeast.or you may have use stale yeast or creamed fresh yeast with sugar.

What kind of pan is best for baking rolls? ›

If you don't have a large 11 inch cast iron pan, you can use a glass baking dish sprayed with nonstick spray. A 9×13 size would work well. It's best to have the rolls all touching each other when you arrange them in the pan, and I'll tell you why…

Why are my homemade dinner rolls dry? ›

Either, you added too much flour or you possibly used all bread flour. Alternately, not giving your dinner rolls enough time to proof and get puffy before baking could yield dense rolls.

What do you brush dinner rolls with before baking? ›

Preheat oven to 375°F. Brush tops of rolls with egg wash and bake until golden brown on top, about 20-25 minutes. Remove rolls from oven and immediately brush with butter.

Why are my rolls dense and not fluffy? ›

There may be several reasons for a dense, cake like texture in bread. It may indicate the kneading wasn't enough for the gluten to develop properly, or the dough was proved for too short a time or the dough may have been too dry. It is also worth checking the flour you used.

Why are my rolls not doubling in size? ›

The liquid was too hot, or not hot enough.

The water temperature should be between 110 - 115 F degrees. If your liquid is too hot (i.e. boiling) it will kill the yeast and prevent the rise.

How to make rolls rise higher? ›

Add ¼ teaspoon of ginger with the warm water when you are first proofing the yeast to help your bread rise higher and fluffier. It won't make your bread taste like ginger, either. Works for rolls, too.
