Here’s how to make Joanna’s Gaine’s tart and sweet lemon bars that your family will be fighting over:

Ingredients

  • Cooking spray
  • 2 cup all-purpose flour
  • 1/2 lb (2 sticks) salted butter
  • 1/2 cup powdered sugar
  • 1/4 teaspoon sea salt
  • 5 tablespoon fresh lemon juice
  • 3 large eggs, slightly beaten
  • 2 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F.
  2. Place a baking tray in the oven.
  3. Line a 9x13 glass baking tray with baking paper, or spray cooking oil all over.
  4. Combine flour, powdered sugar, melted butter, and salt in a large mixing bowl. Mix very lightly with a fork, but don’t mix everything in completely here. Place the partly-mixed dough in the baking dish and flatten it with your fingers to fit the whole tray.
  5. Bake the dough for 20 minutes, or until the edges are lightly browned.
  6. Whisk together the granulated sugar, eggs, and lemon juice until fully combined in another large mixing bowl.
  7. After 20 minutes, take the baking tray with the crust out of the oven, and pour the lemon mixture over it.
  8. Place the baking tray in the oven again for 15 minutes then remove and cover the tray with foil, and return to the oven to bake for an additional 15 minutes.
  9. Remove the tray from the oven and dust with powdered sugar. Let the bake cool completely.
  10. Cut into squares once the bake has cooled.
  11. Storage: You can store your bars in an airtight container at room temperature for up to 1 week, or store them for up to one month by wrapping them in a freezer bag or container.
